...make applesauce! In preparation to go out of town, our friends were cleaning out their fridge. They had a big box of apples that they couldn't finish so they gave them to us. And then we went out of town too. Upon our return the apples were losing their "crunchy status" a bit, so I decided to give making homemade applesauce a try. I used a recipe that I downloaded awhile ago from Williams-Sonoma's website: Chunky Applesauce. It turned out pretty tasty! Kind of like a cross between normal applesauce and apple pie filling (because of the cinnamon and lemon zest). I liked that the sauce has large bits of apple as it gives it a nice texture. Preparing the apples was a little time intensive, but after that it was a piece of cake. Now I have a good use for apples that are "on their way out."
